Vanilla Chip Island Cookies

1-2/3 cups All-Purpose Flour
¾ tsp. Baking Powder
½ tsp. Baking Soda
½ tsp. Salt
¾ Cup (1-1/2 Sticks) butter or Margarine, softened
¾ cup Brown Sugar
¼ cup Granulated Sugar
1 tsp. Vanilla Extract
1 Egg
2 cups (11 oz.) Vanilla flavored baking chips
1 cup Sweetened Flake Coconut
¾ cup Pecans

Preheat oven to 375 degrees. Combine flour, baking powder, baking soda, and salt in a small bowl; set aside.  Beat butter or margarine, brown sugar, granulated sugar, and vanilla in a large mixer bowl until creamy.  Beat in egg, Gradually beat in flour mixture. Stir in chips, coconut, and nuts.  Drop by rounded teaspoonfuls onto greased cookie sheets.  Bake at 375 degrees for 8 to 10 minutes or until edges are lightly browned.  Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.  Makes about 3 dozen cookies.
