Mashed Potatoes

Served at Jennifer and Johnson's reception

2 1/2 pounds Yukon Gold potatoes, washed, cubed with skins left on
3 ounces cream cheese
1/2 cup sour cream
1/2 cup milk
1/2 teaspoon onion powder
1 teaspoon kosher salt
1/8 teaspoon black pepper

Fill a large pot half full with water and bring to a boil.  Cut potatoes and add to water.  Boil about 30 minutes.  Drain potatoes in a colander.  Potatoes can be mashed by hand or use a stand mixer with a paddle.  Put the sour cream, milk and cream cheese in a glass and heat 1-2 minutes or until warm.  Add cream to potatoes and blend with mixer about 1 minute or until desired consistency.  Serve warm.  Makes 6 1-cup servings.
