Mountain Man Breakfast Casserole

1 package sausage (12-16 ounces)
1 package bacon (12-16 ounces)
7 slices Canadian bacon
1 onion, chopped
1 package square hash browns
12 eggs
8 ounces shredded cheddar cheese
Salt and pepper

Pre-heat oven to 375.  Crumble sausage into skillet or Dutch oven on the stove top.  Cut bacon into 1 inch pieces.  Stir bacon and sausage together with chopped onion and cook on the stove top on medium high heat 10 minutes, add Canadian bacon and cook until sausage is almost done (there should still be moisture in the pan).  Drain slightly.  Add hash browns, cover the pan and cook in the oven about 20 minutes.  Stir gently and add salt and pepper.  Beat eggs and pour over the top of the hash browns, don’t stir.  Let cook about 10 minutes or until eggs are set.  Sprinkle cheese over the top and let sit for 5 minutes for the cheese to melt.  Serve with toast and orange juice.
Makes about 7 adult servings.
