Meatloaf

8 square saltine crackers
1 egg
¼ cup milk
½ teaspoon salt
2 tablespoons ketchup
2-3 lbs ground chuck or ground round

Topping
½ cup ketchup
1/3 cup brown sugar

Crush crackers and put into a mixing bowl. Add egg, milk, salt, and ketchup and mix together. Add meat and mix just until blended.  Pack meat mixture down into bowl to form a stiff mass that holds together.  Spray the top rack of a broiler pan with cooking spray and add 1 cup water to the bottom pan.  Carefully place formed meatloaf on top pan.  Cooking it on a slotted pan lets the grease drip. Adding water to the bottom pan keeps the grease from smoking and making a burned mess of the pan.  Move pan carefully so as not to spill the water in the bottom.  Poke 3 holes in the meatloaf evenly spaced so the middle cooks as fast as the outside.  Cook about 30 minutes at 350 and check temp.  Meatloaf needs to be 165 degrees in the center. When the meatloaf is done make the topping by mixing ketchup and brown sugar.  Spread on top.  Bake 5 more minutes.  Use a spatula to carefully slide the meatloaf onto a serving platter.
