Chicken Poppy Seed

Chicken in a creamy sauce cooked in a casserole dish with buttered Ritz crackers on top.  Serve over white rice.  Often requested, simple comfort food that’s inexpensive and oh so easy.       


Casserole

12 ounce chicken - canned, drained
1/2 cup light sour cream
10 ounce can cream of chicken soup


Topping for casserole

1 sleeve round buttered crackers (like Ritz)
1/2 stick butter
1 teaspoon poppy seeds


Rice

1 cup white rice
2 cups water
½ salt


Directions for casserole

Preheat oven to 350º.  
Stir together chicken, sour cream and soup.  Pour into a 9x9 square pan.  If doubling this recipe use a 9x13 pan.  Melt the butter in a bowl.  Crush the crackers.  Add crackers and poppy seeds to the butter and stir until crackers are coated with butter.  Sprinkle buttered crackers on top of the chicken mixture.  

Bake for 30 minutes.


Directions for rice
Pin a large saucepan add water and rice.  Bring to a boil.  As soon as boiling, lower heat to simmer, cover and cook 15 minutes.   



Serve

Serve casserole over rice. 


            Ready in 35 Minutes
