Strawberry Pie

Crust
1 cup all-purpose flour
¼ teaspoon salt
1 teaspoon sugar
1/3 cup vegetable oil
3 Tablespoons cold water

Pre-heat oven to 350 degrees.

Stir the dry ingredients together. Add the oil and water and mix well and gather into a smooth ball.
Press into the bottom and sides of a pie pan. Prick with a fork and bake in pre-heated 350 degrees oven for 10 minutes. Let cool slightly before adding the filling.

Filling
1 ½ cups water
¼ cup cornstarch
¾ cup sugar
¼ cup strawberry jello
1 cup strawberries

Mix water, cornstarch, sugar, and jello. Stir until everything is combined. Heat on medium heat until thick. Let cool 5 minutes.

Cut up strawberries and place in the bottom of the pie crust. Carefully pour filling over the berries. Refrigerate until cool.

Topping
12 ounce cool whip

When pie is cool, add all the thawed cool whip to the top of the pie.
