Margaret's Ham Casserole

2 cups diced ham or Spam
4 ounces egg noodles or
    8 ounces Linguine Noodles (my preference)
1 can Cream of Mushroom soup
3/4 cup water and milk combined (I use almond milk)
1 teaspoon fresh chopped onion or
   1/2 teaspoon onion powder (easier)
3/4 cup Nippy Cracker Barrel cheese (grated) or
   1 cup regular shredded cheddar (my favorite...and it's easy)
Buttered toast (cubed and added to the top or just served as toast)

Bring a big pot of water to a boil.  Boil the noodles in salted water for about 9 minutes.  Dice the ham or Spam into small chunks. Mix the soup and milk, onion, cheese, and ham into a large microwave safe casserole bowl. Microwave a few minutes and stir.  Keep heating and stirring until steamy and the cheese is all melted (about 5 minutes).  When the pasta is done,  drain it and add to the soup.  Stir gently until combined.  Buttered toast can be cubed and added to the top, I just serve it the casserole with buttered toast on the side.  Mom always baked the casserole  (400 for 30 minutes) but I just serve it at this point.
This is good with a salad and canned or fresh fruit.  Makes about 5 or 6 generous servings.  Comfort food.
