Sister Huber's Mom's Carrot Cake

3 cups finely shredded carrots (or more)
1 cups nuts, chopped
1 3/4 cup sugar
1 cup oil (may substitute 1/2 applesauce)
4 eggs
2 cups flour
1 tsp salt
2 tsp soda
2 tsp cinnamon

Prepare carrots and nuts.  Mix sugar, oil, and eggs in large bowl of electric mixer.  Sift dry ingredients and beat with egg mixture.  Add carrots and nuts.  Blend gently.  Pour batter into well-greased & floured pan.  Bake until cake tests done (50-60 minutes.)

Cream Cheese Frosting
4 oz cream cheese
3 Tbsp butter
2 cups powdered sugar
1/2 tsp vanilla
1/2 cup nuts, chopped

Blend first 3 ingredients.  Beat in vanilla.  Add nuts and mix just until combined.
