Pancakes or Waffles

3 cups self-rising flour
2 cups milk**
1 egg
1/3 cup vegetable oil
Water as needed

Mix flour, milk, egg and oil together and stir with wire whisk until almost smooth.  Thin with water just until easy to stir but not watery.  Thin pancakes are really good:) Use an electric griddle, pre-heat to 350. Spray lightly with cooking spray. Pour batter on the griddle trying not to let the pancakes touch each other. Cook one side until most of the bubbles have popped.  Turn and cook about 1 minute more.

**I use 1/3 cup powdered milk and stir it into the flour, then just add 2 cups water.  It's a good way to rotate my powdered milk:)
