3 cups all purpose flour
1/2 cups whole wheat flour (or just all white flour)
1/3 cup sugar
1/3 cups milk powder (if you don't have milk powder-see note by the warm water)
1 1/2 teaspoons Kosher Salt or Sea Salt
2 1/4 teaspoons Active Dry Yeast
1 cup very warm water (if you don't have milk powder-make 1/2 the water be warm milk)
1 large egg
1/3 cup butter or margarine
2 tablespoons butter or margarine, reserved to put on top :)
Add all the dry ingredients to a large bowl. Stir to combine. Add the warm water, egg and melted butter. Stir until all the ingredients are wet. If using a mixer put the bowl on the mixer with a dough hook. Allow to mix on low for 20 minutes. (Dough will be sticky but should form a ball. (This also works great in a bread machine on the dough setting-just add the wet ingredients first, then the dry.)
When dough has kneaded for 20 minutes, cover with plastic wrap and let sit for about 20-30 minutes. Stir dough down and pull away from the sides of the bowl. It doesn't need to completely deflate. Lift the dough ball out (use a little flour on your hands if it's too sticky). I like big rolls and this is the easiest way to make them about the same size. Form into a nice round ball and divide in half. Now there are 2 balls. Then divide those 2 into 4. Then divide all 4 in half. Then divide all eight in half. Now you have 16 altogether. Gently reshape the balls if needed. Grease 2 cake pans or pie pans. Place 8 rolls in each pan. Spoon 1/4 teaspoon of the melted butter over each roll and use the back of the spoon to spread all around on the top of each roll. (It's super yummy if it puddles a little at the bottom of the rolls. You won't need all of it. Save a little bit for when they first come out of the oven, to make them shiny:)
Cover rolls with plastic wrap that has been sprayed with cooking spray. Let rise about 20-30 minutes in a warm, draft free place until they are doubled in size.
Preheat oven to 400 F.
Bake at 400 F for about 12 minutes or until golden brown and the kitchen smells amazing!
Makes 16 generous rolls
