Sister Latu's Mom's Curry Chicken

2 Tablespoons oil
1 onion
1 - 3 lb bag Chicken (we used chicken breast tenders)
2 - 10 ounce bags frozen (steam in the bag) mixed vegetables
2-3 teaspoons curry
salt and pepper to taste

Chop the onion and cook on low in a skillet with the oil.  While onion is cooking cut the chicken into bit sized pieces.    Add the chicken to the onions and cook until chicken is done.  (You might need to cover it near the end if the liquid is all cooked out).  Cook the mixed vegetables in the microwave until hot.  When chicken is done add the cooked mixed veggies.  Carefully stir in the curry, and the salt and pepper.  Serve over rice.  Makes about 8 servings.
