Lentil and Brown Rice Taco Salad

Brown Rice

2 1/2 Cups water
1 cup brown rice
1 tablespoon margarine
1/2 teaspoons salt

Bring water to a boil, add salt, butter and rice  Reduce heat and simmer, covered 45 minutes.

Lentils

1 cup lentils
1 3/4 cups water
1 bay leaf, whole
1 whole stalk celery
1/8 teaspoon garlic powder
1/2 teaspoon salt
1/8 teaspoon whole thyme

Measure lentils and rinse thoroughly.  Put all the ingredients into a pot and bring to a boil. Cover and lower to simmer, cook 30 minutes.  Remove celery stalk and bay leaf before serving.

Salad

1 bag White Tortilla Chips
1/2 head lettuce,
1-2 tomatoes, chopped
shredded cheese
ranch dressing
salsa

Serve like Taco Salad

Chips, brown rice, lentils, lettuce, tomato, cheese, ranch, salsa (optional)

Serves 4-6
